I found this photo online. I can very well relate to this. This is how our dish washing Area used to look like when we were serving in steel plates and also had Thali in the menu.
When I used to pass by the dishwashing area in the night I would always show my appreciation for my dish washer and offer him $25 for the extra effort he needs to take to get the kitchen clean for breakfast service the next day. My dish washer used to leave at 3:30 am.
In fact about 7 years ago on a busy Saturday night my dishwasher did not show up and I was faced with a humongous task of getting a huge pile of soiled dishes cleaned and I was willing to pay up to $50 per hour to get everything cleaned.
Cutting down the offerings, focusing on quality and serving in compostable and disposable wares was the best decision we took. Now my dishwasher is able to focus on helping with bussing and turning the tables faster.
There are people who complain about eating from compostable wares but in a fast changing business world you adapt quickly or perish. Running a Indian food business outside India has its own challenges and dish washing challenges are in the top 3 challenges.
The choice is entirely upon the business.
